做法:春笋切成片后(hòu )加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水(shuǐ )半(bàn )掩住春(chūn )笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮(zhǔ )到(dào )水快熬(áo )干的时候加(jiā )入盐,翻(fān )炒均匀稍收(shōu )汁(zhī )时盖上锅盖(gài )焖。
