做法:春笋切成片后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收(shōu )汁时盖(gài )上锅盖(gài )焖。
