做法:洗净宰好鲫(jì )鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把(bǎ )陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块在锅上擦一遍,放两勺(sháo )油,待油六成热(rè )下鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲里的清(qīng )水,放(fàng )入煎煮好的(de )鲫鱼和其他材料,武火煮沸,转中小火(huǒ )煲一个(gè )半小时,下(xià )盐调味即可品尝(cháng )。
