做法:春(chūn )笋切(qiē )成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再(zài )加(jiā )入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅(guō )盖(gài )焖。
