做(zuò )法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右。再加入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖(mèn )。 -
