做(zuò )法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻(fān )炒1分钟左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
