做法(fǎ ):春笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入(rù )少(shǎo )量清(qīng )水半(bàn )掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快(kuài )熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
