做(zuò )法:春笋切成片后(hòu )加少许(xǔ )盐(yán )捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻(fān )炒(chǎo )均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
