做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少(shǎo )量(liàng )清水半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时(shí )候(hòu )加(jiā )入盐,翻(fān )炒均匀稍收(shōu )汁(zhī )时盖上锅盖焖。
