做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加(jiā )入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快(kuài )熬(áo )干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
