做(zuò )法:洗净宰好鲫鱼,洗净淮(huái )山和薏(yì )米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦(cā )一遍,放两勺油,待油六(liù )成(chéng )热下(xià )鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入煎煮好(hǎo )的鲫鱼和其他材料(liào ),武火煮沸,转中(zhōng )小火煲一个半小(xiǎo )时,下(xià )盐调味即可品尝。
