做(zuò )法:春笋切成片后加少许盐捞出后(hòu )用清(qīng )水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水(shuǐ )半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖。
