做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加(jiā )入(rù )少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收(shōu )汁(zhī )时盖上(shàng )锅盖焖(mèn )。
