做法:洗净(jìng )宰好鲫鱼,洗净淮(huái )山和薏米。用清水(shuǐ )把陈皮泡(pào )软,拍裂一小块姜,热锅(guō ),用姜(jiāng )块在锅上擦一遍(biàn ),放两(liǎng )勺(sháo )油,待油六(liù )成热下鱼,煎至微黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放(fàng )入煎煮好的鲫鱼和(hé )其他材(cái )料,武火煮沸,转中小火煲一(yī )个半小时,下盐调味即可品尝。
