做法(fǎ ):春笋切成片后(hòu )加(jiā )少(shǎo )许(xǔ )盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半(bàn )掩住春笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅盖(gài )焖。
