做法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖(gài )上(shàng )锅盖大火(huǒ )煮(zhǔ )开后转中火(huǒ )。煮到水快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收(shōu )汁时盖上(shàng )锅盖焖。
