做法:洗净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把陈皮泡(pào )软,拍裂一小(xiǎo )块姜(jiāng ),热(rè )锅(guō ),用姜(jiāng )块在锅上(shàng )擦一(yī )遍,放两勺油,待(dài )油六(liù )成热下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小火煲一(yī )个半小时,下盐调味(wèi )即可品尝。
