做法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅(guō )烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量(liàng )清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上(shàng )锅(guō )盖焖。
