做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山(shān )和薏米。用清水把陈皮泡软,拍裂(liè )一小(xiǎo )块姜,热锅,用姜块在锅(guō )上(shàng )擦一遍,放(fàng )两勺油,待油六成热下鱼(yú ),煎(jiān )至微黄。煮沸瓦煲里的清(qīng )水,放入煎(jiān )煮好的鲫鱼和(hé )其他材料,武火煮(zhǔ )沸,转中小火煲一个半小(xiǎo )时,下盐调味即可(kě )品尝。
