做法:春笋切(qiē )成片(piàn )后加(jiā )少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱(cōng )切成段(duàn )。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入(rù )少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
