做(zuò )法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热(rè ),倒入2勺(sháo )油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩住(zhù )春(chūn )笋,盖上锅盖大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀(yún )稍收汁时盖(gài )上锅盖焖。
