做法:春笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒(dǎo )入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后(hòu )转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
