做法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清(qīng )水半(bàn )掩住(zhù )春笋,盖(gài )上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干(gàn )的(de )时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
