做法:春笋切成片后加少许盐(yán )捞(lāo )出(chū )后用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水(shuǐ )半(bàn )掩住(zhù )春笋,盖(gài )上(shàng )锅盖大火煮开(kāi )后(hòu )转中火。煮到水快熬干的(de )时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
