做(zuò )法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段(duàn )。锅烧(shāo )热,倒入(rù )2勺油(yóu ),放入生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的(de )时(shí )候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅(guō )盖(gài )焖。
