做法:春笋切(qiē )成片后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺(sháo )油(yóu ),放入生姜、春笋(sǔn )、牛肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水快(kuài )熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
