做法:洗(xǐ )净(jìng )宰(zǎi )好鲫鱼(yú ),洗净淮山和(hé )薏米。用清(qīng )水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块(kuài )在(zài )锅上擦一遍,放两勺油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中(zhōng )小(xiǎo )火煲一(yī )个半小时,下盐(yán )调味即可品尝。
