做法:春笋切成片后加(jiā )少许(xǔ )盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大火(huǒ )煮(zhǔ )开后转中火。煮到水快熬(áo )干(gàn )的时候加入(rù )盐,翻炒(chǎo )均匀稍(shāo )收汁时盖(gài )上(shàng )锅(guō )盖焖(mèn )。
