做法(fǎ ):春笋切成片后加(jiā )少(shǎo )许盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清水半掩(yǎn )住春(chūn )笋,盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻(fān )炒(chǎo )均(jun1 )匀稍收汁时(shí )盖上锅盖(gài )焖。
