做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油,放(fàng )入生(shēng )姜、春(chūn )笋、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
