做(zuò )法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切(qiē )片,葱切(qiē )成段。锅烧(shāo )热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
