做法(fǎ ):春笋切成片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛(niú )肉片(piàn )、葱(cōng )段(duàn )翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
