做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量(liàng )清水(shuǐ )半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖(gài )焖(mèn )。
