做法:洗净宰好鲫(jì )鱼,洗净淮山和薏米(mǐ )。用(yòng )清水把(bǎ )陈(chén )皮泡软,拍(pāi )裂一(yī )小块姜,热锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫鱼和其(qí )他(tā )材料,武火煮沸(fèi ),转中(zhōng )小火煲一个(gè )半小时,下(xià )盐(yán )调味即可品尝。
