做法:洗净宰好鲫鱼,洗净淮(huái )山和薏米(mǐ )。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用姜块(kuài )在(zài )锅上(shàng )擦一遍,放(fàng )两勺油,待油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的(de )清水,放(fàng )入煎煮好的(de )鲫(jì )鱼和(hé )其(qí )他(tā )材料,武火煮沸,转中(zhōng )小(xiǎo )火(huǒ )煲一个半小时,下盐调味即可品尝。
