做法:春(chūn )笋切成片后(hòu )加少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖(gài )焖(mèn )。
