做法:春(chūn )笋切(qiē )成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽(chōu )、老(lǎo )抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
