做(zuò )法:洗净宰(zǎi )好鲫鱼,洗净淮山(shān )和薏米。用清水(shuǐ )把陈皮(pí )泡软(ruǎn ),拍裂(liè )一小块姜,热锅,用姜块在锅上擦一遍,放两勺(sháo )油,待(dài )油六成热(rè )下鱼,煎至微黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮(zhǔ )好的鲫(jì )鱼和其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐(yán )调味即可品尝。 -
