做法:洗净(jìng )宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用(yòng )姜块在锅上擦一遍,放两勺油(yóu ),待(dài )油六成(chéng )热下(xià )鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其他材(cái )料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一个(gè )半(bàn )小时,下盐调味即可品尝。
