做(zuò )法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用(yòng )清水浸泡(pào ),生姜切(qiē )片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水(shuǐ )半掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干(gàn )的(de )时候加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
