做法:春笋(sǔn )切成片后加少(shǎo )许(xǔ )盐捞出(chū )后(hòu )用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半掩(yǎn )住春笋(sǔn ),盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
