做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜(jiāng )块在(zài )锅上擦一遍,放两勺(sháo )油,待油六(liù )成热下(xià )鱼,煎至微(wēi )黄。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎(jiān )煮好的鲫鱼和其(qí )他材料(liào ),武火煮沸,转中小火煲一个半(bàn )小时,下(xià )盐调味即(jí )可品尝。
