做法:洗(xǐ )净宰好鲫鱼(yú ),洗净(jìng )淮(huái )山和薏(yì )米。用(yòng )清水把陈皮泡软(ruǎn ),拍裂一小(xiǎo )块(kuài )姜,热锅,用姜块在锅上擦(cā )一遍(biàn ),放两勺油,待油六成(chéng )热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其(qí )他材料,武火煮沸,转中小火煲一个半小时(shí ),下盐调味即可品(pǐn )尝。
