做(zuò )法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜(jiāng )块在锅上擦一(yī )遍,放两勺油,待油六成热(rè )下鱼,煎至(zhì )微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和(hé )其他材料,武火煮沸,转(zhuǎn )中小火煲一个半小时(shí ),下(xià )盐(yán )调味(wèi )即可品尝(cháng )。
