做法(fǎ ):春笋切成片后(hòu )加(jiā )少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
