做法:春笋(sǔn )切成片后加少许(xǔ )盐(yán )捞出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快(kuài )熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
