做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅(guō )烧热,倒(dǎo )入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮到水快熬干的(de )时候加(jiā )入盐,翻炒均匀稍(shāo )收汁时(shí )盖(gài )上锅(guō )盖焖。
