做法(fǎ ):春(chūn )笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左(zuǒ )右。再加入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
