做法:春(chūn )笋切成片后加少许(xǔ )盐捞出(chū )后用清(qīng )水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧(shāo )热(rè ),倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬(áo )干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
