做法(fǎ ):春笋切成(chéng )片后加(jiā )少许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩(yǎn )住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
